Smokey Chipotle

Tip of the Day: if you are using chipotles in adobo sauce, but don't need the whole can, place a few chipotles in snack size Ziploc bags and freeze. This will be extremely handy when you need these in the future, without having to buy a whole can (again) and wasting the remaining chipotles (again).

Two of Tim's favorite things are grilling and peppers (in this case, chipotle peppers). So when I stumbled across this recipe I knew I couldn't not make it. I slightly underestimated how many kernels there are on a cob of corn, but it has worked out in our favor with leftovers to be used with our meals throughout the week.




One thing Tim isn't a fan of is sour cream, however, if used sneakily he will happily eat it! Although I wasn't so sneaky, because he saw it on the counter and even claims he could smell it.



Voila! Smokey chipotle corn salad that packs a bit of a punch.

Hi Peeps!

It's been so long since I have graced this blog with my presence. I'm a big girl now, which also means older & wiser. These are two of my favorite things to do with my peeps (aka Mom & Dad): enjoy nature & sleep! And yes, I still like to steal clothes from the dirty laundry basket. Sometimes I do it at bedtime and my parents don't even know until the morning when they wake up! tee hee :-)



We're Back!!

After a hiatus, we are back! We reached a point where most of our projects were wedding related, and we weren't about to divulge any details prior to the big day! Then we've been getting rid of wedding decor, sorting through pictures and creating albums, and working on the house!
